Aims, contents and method of the course
The first half of this lecture includes an introduction to the human metabolism of foreign substances and the basic principles of the safety assessment of food (delimitation of danger / risk; occurrence / exposure; testing of genotoxic carcinogens; ALARA; benchmark dose approach; margin of exposure; threshold of toxicological concern etc.). In the second half, selected toxicologically relevant substances in food are discussed in detail: genotoxic plant constituents, endocrine disruptors, contaminants of natural origin (e.g. mycotoxins), contaminants from processing (e.g. acrylamide, polycyclic aromatic hydrocarbons, dioxins and PCBs, etc.)Frontal lecture with PowerPoint slides, which are made available via Moodle

The exam is carried out individually from 8:00 a.m. onwards and, in principle, 30 minutes are reserved for each person. If more candidates are registered than can be examined in one day, the examination period will be extended by one day.
