Aims, contents and method of the course

Vermittlung der naturwissenschaftlichen und technischen Grundkenntnisse der Be- und Verarbeitung von Lebensmitteln unter Zugrundelegung einer gesamtheitlichen, verfahrensorientierten Betrachtungsweise. Vertiefende Einheiten im zweiten Teil der Vorlesung.
