Information

Aims, contents and method of the course

Ernährungswissenschaftliche Fragestellungen sind ohne die fundierte Kenntnis der Lebensmittel in der Ernährung des Menschen nicht bearbeitbar. Daher ist die Warenkunde ein weiteres Kernfach der Ernährungswissenschaften. Studierende kennen Herkunft und Beschaffenheit von pflanzlichen und tierischen Lebensmitteln über die gesamte Wertschöpfungskette hinweg als Basis für die Beurteilung der Lebensmittelqualität und ihrer Bedeutung in der Ernährung des Menschen. In der Warenkunde I - Produktion und Qualität pflanzlicher Lebensmittel wird insbesondere auf die Lebensmittelgruppen Speiseöle und Speisefette, Obst und Gemüse, Hülsenfrüchte, Getreide, Würzen, Würzmittel, Essig, alkoholische Getränke und Süßstoffe eingegangen.
Die Lehrveranstaltung wird in Form von Frontalunterricht mit Unterstützung audiovisueller Medien und Audience Response System durchgeführt.
