Information
Aims, contents and method of the course
Diese Vorlesung umfasst in der ersten Hälfte eine Einführung in den humanen Fremdstoffmetabolismus und die Grundprinzipien der Sicherheitsbewertung von Lebensmitteln (Abgrenzung Gefährung/Risiko; Vorkommen/Exposition; Testung genotoxischer Kanzerogene; ALARA; Benchmark-dose Approach; Margin of Exposure; Threshold of toxicological concern etc). In der zweiten Hälfte werden ausgewählte toxikologisch relevante Stoffe in Lebensmitteln im Detail besprochen: genotoxische Pflanzeninhaltsstoffe, endokrine Disruptoren, Kontaminanten natürlichen Ursprungs (z.B. Mykotoxine), Kontaminanten aus Verarbeitungsprozessen (z.B. Acrylamid, polyzyklische aromatische Kohlenwasserstoffe, Dioxine u. PCBs etc)Frontaler Vortrag mit Power Point Folien, die per Moodle zur Verfügung gestellt werden

Schriftliche Prüfung aus Multiple Choice und offenen Fragen, keine Hilfsmittel
Minimum requirements and assessment criteria
Zum Bestehen der Prüfung sind 50% der Punkte notwendig.
